Funaki Sake Brewery / Visiting sake breweries in Fukui Prefecture

We visited Funaki Sake Brewery in Fukui City, Fukui Prefecture. While we were watching Shikomi (mashing) process, the executive director of Funaki Brewery, Mr. Funaki explained to us about sake brewing. At Funaki sake brewery, in addition to Yamada-nishiki rice and Gohyakumangoku rice which are generally used for sake brewing, a revived rice, Shinriki-mai rice and the rice which is originally from Fukui, Koshihikiari rice are used.
In the photograph above, you can see the executive director of Funaki Brewery, Mr. Funaki who explained to us about the process of making sake in detail.
Mr. Nojiri, the brew master at Funaki Brewery, how he was looking into the inside of the tank, being deep in thought quietly and conducting Shikomi (mashing) process was impressive.
The name of Koshihikari rice, “Okano Izumi” is originated from Okabo district in Fukui City where has Fukui Prefectural agricultural experimental station in which the Koshihikari rice was invented.
